VEGAN AVOCADO LIME SUPERFOOD “CHEESECAKE”

Ingredients

1/4 cup natural raw almonds

1/2 cup raw shelled pistachios

1 cup pitted dates, soaked in warm water for 15 minutes and drained

1/2 tsp matcha powder

pinch sea salt

3 tbsp shredded coconut

handful goji berries

1/2 tsp pure vanilla extract

FOR THE CHEESECAKE LAYER

1 1/2 cups raw unsalted cashews, soaked in water overnight and drained

zest of 1 lime

1/4 cup lime juice

1/2 ripe avocado

1/2 cup maple syrup

1 tsp matcha powder

1/2 cup + 2 Tbsps, full fat canned coconut milk solids (refridgerate overnight)

1/3 cup coconut oil

1/2 tsp pure vanilla extract

Directions

FOR THE CRUST

1In a high speed blender or food processor, add all the ingredients except the dates and goji berries. Pulse until a fine meal is formed.

2Add dates and goji berries into mix. Pulse until the ingredients stick together.

3In a 8" springform pan, layer the bottom with parchment paper. Cut a strip of parchment paper and place inside the ring part of the pan. Press the crust mixture into the bottom of the pan and even out with spatula. Place in freezer to set.

FOR THE CHEESECAKE LAYER

1Place all the ingredients for the cheesecake layer into a blender or food processor. Blend until smooth.

2Remove crust from fridge and pour cheesecake layer over crust, evening out with spatula. Place the cake in freezer to set.

3Keep cake frozen between serving. Remove cake from freezer and let sit at room temperature for 10 minutes before cutting.
